Lemon Quinoa

One more Weekend on board!!!!After a longtime gonna experience a sunny weekend this week,wish sun should spread a warmthy n bright days for the weekend.Day light saving starts on Sunday,rebounding the clock pin back for an hour and gonna enjoy the balmy days here after :)Talking about the title for the post,yes one more healthy recipe from my kitchen.In contemporary times, quinoa has become highly appreciated for its nutritional value, as its protein content is very high, yet not as high as most beans and legumes. Nutritional evaluations of quinoa indicate that it is a source of complete protein. Furthermore, it is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa is also a source of calcium, and thus is useful for vegans and those who are lactose intolerant Quinoa is gluten -free and considered easy to digest.If Ur bored up of brown rice then this is a very good options for Ur taste buds.This yummyyy nutty flavour blend well with any type of vegetable and enhances the flavour for any recipe.U can just cook it and have it for with any liquid side dish.Are u curious to know more about this??Hop on to this link and have a detail look here. Things needed :

Lemon             2
Quinoa            1cup (cooked)
Green Chili    2
Oil
Salt 

Tadka Ingredients :

Mustard seeds
Cumin seeds
Urad dal
Chana dal
Peanut/Cashew (optional)
Curry leaves
Turmeric powder
Hing

Take a close shot of the nutty lemon quinoa!!!




How to cook Quinoa :

  1. Wash quinoa and for 1 cup of quinoa add 2 cup of water and pinch of salt.
  2.  Put it in a high flame on stove top and bring to a boil.
  3.  Reduce heat and place lid and cook till it is done.
Lemon quinoa recipe :
  • Heat 1 tbsp of oil in a pan, add ½ tsp of mustard (avaalu, ria) and let them splutter.
  •  Add 1 tsp black gram (urad dal, minappappu), 1 tbsp of Bengal gram (channa dal, senaga pappu), 2 slit green chillies and fry till the dals till they turn red (approx 2 mts) on medium heat.
  • Add Peanut/Cashew to the fried dals and cook on med flame for few min till they change colour.
  • Add 1/2 tsp turmeric, 10-12 curry leaves and 1/4 tsp asafoetida (hing, inguva) and fry for 10-15 seconds. Turn off heat.
  • Add this to the cooked quinoa with 5-6 tbsp of lemon juice. Combine well. Adjust salt and lemon juice.
  • Serve with a pickle or curd on side.

Note : U can cook quinoa in a rice cooker just as u cook the rice.

It looks so much like broken wheat. I make broken wheat upumpa quite often with cabbage, onion, and tomatoes. It would take a little longer to cook than Rava, but it taste very good. And I don't first boil it, I just put it after the usual seasoning, along with vegetables and add water and let them all cook together covered.
My mother used to make it and I learnt it from her.
Yours look very delicious, and the presentation is also very nice.
